FEATURED RECIPE: Broccoli with Seal Cove Farm Feta
- Steam 1 bunch of broccoli until tender, yet still crisp and bright green (approx. 4 minutes).
- Refresh broccoli in cold water, then drain and place in bowl.
- Mix 4 Tbsp olive oil with 3 Tbsp lemon juice and 1-2 cloves minced garlic, pour over broccoli.
- Before serving add: 2 diced tomatoes and 1/2 Cup Seal Cove Farm Feta and
1/2 tsp black pepper.
(Variation: Before serving add: 1/4 Cup mixture of diced sun dried tomatoes and Nicoise olives, and garnish with freshly chopped parsley.)
~ WITH VEGETABLES ~
Using Seal Cove Farm's "Classic Chevre":
- Mix with finely chopped fresh herbs such as parsley, basil, rosemary, tarragon, marjoram, or chives.
- Spread on lightly toasted French bread, brush with olive oil and thyme, and heat through.
- Spread on French bread, top with pesto and sun dried tomatoes.
- Spread on French bread or crackers and top with Maine blueberry chutney.
- Wrap in thin slices of smoked Maine salmon.
~ APPETIZERS and SANDWICHES ~
Using Seal Cove Farm's "Classic Chevre":
- Mix with finely chopped fresh herbs such as parsley, basil, rosemary, tarragon, marjoram, or chives.
- Spread on lightly toasted French bread, brush with olive oil and thyme, and heat through.
- Spread on French bread, top with pesto and sun dried tomatoes.
- Spread on French bread or crackers and top with Maine blueberry chutney.
- Wrap in thin slices of smoked Maine salmon.
~ PIZZA ~
- Use "Classic Chevre" in combination with, or in place of Mozzarella cheese. Top with Greek olives.
- Brush pizza crust with olive oil, top with "Classic Chevre", fresh tomatoes, red onions, and green olives.
~ PASTA ~
- Use our "Peppercorn Chevre" instead of Parmesan Cheese.
- For a less rich fettuccine Alfredo, mix "Classic Chevre" with milk and Parmesan cheese in a blender or food processor, pour over pasta.
- In lasagna, substitute all or part of the ricotta cheese with "Classic Chevre".
~ CHICKEN ~
- Lightly brown a boneless chicken breast, stuff with 2 tablespoons our "Herbed Chevre", "Peppercorn Chevre", or " Tarragon Chevre". Bake until chicken is cooked.
~ SALAD ~
- Broil a one-ounce round of "Classic Chevre" until lightly browned on top. Place on a bed of fresh lettuce, and serve with a vinaigrette dressing.
~ PANCAKES and CREPES ~
- Mix "Classic Chevre" with a little sugar and orange flavoring for use as a topping or filling.
~ DESSERTS ~
- Substitute "Classic Chevre" for cream cheese in your favorite cheesecake recipe.
- "Moosetrack Strawberry Mousse": Dissolve 1 Tablespoon gelatin in 1/4 Cup warm fruit juice, mix with 1 LB "Classic Chevre" and one package of frozen strawberries. Puree in blender and chill until firm.
