Anderson's Shrimp

Serves 2
- 8oz peeled and uncooked Maine shrimp or 16 Gulf shrimp
- 1 tsp butter
- 1 egg
- 1/4 cup light cream or rich milk
- 1/4 cup (2 ounces) Seal Cove Farm Feta
- hot sauce
Preheat oven to 450.
Saute 8 ounces Maine Shrimp ( or 16 Gulf Shrimp) in 1 tsp butter for 1 minute. Set aside. Whisk together 1/4 Seal Cove Farm Feta, 1/4 cup light cream or rich milk,and 1 egg. Add hot sauce to taste. Pour mixture over shrimp which has been divided into two ramekins. Place an half inch thick slice of paste tomato on top. Sprinkle with bread crumbs if desired. Bake at 450 for 15-20 minutes or until the egg, cream, cheese mixture bubbles and forms a custard.
